Shiitake extract is a product isolated and purified from shiitake, the most important active ingredient of which is lentinan. The shiitake (Lentinula edodes) is an edible mushroom native to East Asia, which is cultivated and consumed in many Asian countries, as well as being dried and exported to many countries around the world. It is a feature of many Asian cuisines including Vietnamese, Chinese, Japanese, Korean and Thai. In the East, the shiitake mushroom has long been considered a delicacy as well as a medicinal mushroom.

The lignins in L.E.M., called EP3, not only activate the immune system, but also have been shown to have direct antiviral activity.
4. Lentinan from shiitake binds to white blood cells, such as Europhiles and monocots, and it increases host resistance to infections by viruses, bacteria and parasites.
